Ingredients: Chimichurri:; ½ cup chopped flat leaf parsley; ¼ cup chopped cilantro; ⅓ cup finely diced red bell pepper; ⅓ cup finely diced red onion; 3 cloves garlic (minced); 1 serrano chili (rib & seeds removed, minced); 1 ½ teaspoons dried oregano; 1 teaspoon dried basil; 1 teaspoon red pepper flakes; ½ teaspoon salt; ½ teaspoon smoked paprika; ½ teaspoon ground black pepper; Juice of 1 lemon (about 2 Tablespoons - zest it first & save the zest for the potatoes); 3 Tablespoons red wine vinegar; ⅓ cup olive oil (should cover the chimichurri, if not, add more); Steak; 2 lbs.
